Almatitan brings two single barrel Reposados at 108 proof alongside their Añejo. The Con Bagazo and Sin Bagazo distinction matters: Con Bagazo ferments the agave fiber alongside the juice, contributing a more textural, earthy agave character that Sin Bagazo — fermented without fiber — produces in a cleaner, more refined register. Same distillery, same harvest, fundamentally different
fermentation approach. At 108 proof both deliver the agave intensity that single barrel tequila at full strength produces when the source material justifies it. The Añejo rounds out the trio with extended oak maturation softening the profile without losing Almatitan's characteristic agave depth.
Cascahuin is a Jalisco distillery with a production philosophy built around traditional methods — and the Tahona Blanco is where that shows most clearly. Stone-ground agave produces a specific earthy, mineral character that mechanical shredding doesn't replicate. The standard Blanco and Plata offer Cascahuin's unaged agave character at different entry points, while the Reposado
shows what a few months of oak rest does to that foundation.
